EASY TO MAKE CHEESEBURGER SOUP

Ingredients:

– 1 pound ground beef

– 1 tablespoon olive oil

– 1 onion, finely chopped

– 2 carrots, diced

– 2 celery stalks, diced

– 3 cloves garlic, minced

– 4 cups chicken or beef broth

– 4 cups potatoes, peeled and diced

– 1 teaspoon dried oregano

– 1 teaspoon dried thyme

– Salt and black pepper to taste

– 1/4 cup all-purpose flour

– 1/4 cup unsalted butter

– 2 cups milk

– 2 cups shredded cheddar cheese

– 1/2 cup sour cream

– Green onions and crispy bacon for garnish (optional)

Directions:

1. In a large pot, brown the ground beef over medium heat. Drain excess fat and set aside.
2. In the same pot, add olive oil and sauté chopped onions, diced carrots, diced celery, and minced garlic until vegetables are tender.
3. Pour in the broth, add diced potatoes, dried oregano, dried thyme, salt, and black pepper. Bring to a simmer and cook until potatoes are tender.
4. In a separate saucepan, melt butter over medium heat. Stir in flour to create a roux.
5. Gradually whisk in the milk, stirring constantly until the mixture thickens.
6. Add the milk mixture to the soup pot, followed by the cooked ground beef.
7. Stir in shredded cheddar cheese until melted. Finish by adding sour cream and adjusting seasoning to taste.
8. Allow the Cheeseburger Soup to simmer for a few more minutes to meld the flavors.
9. Serve hot, garnished with green onions and crispy bacon if desired.
