Savory Beef and Vegetable Fried Rice

Ingredients:

2 cups cooked rice, preferably day-old
1/2 lb beef sirloin, thinly sliced
2 tablespoons soy sauce, divided
1 tablespoon oyster sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil, divided
2 eggs, lightly beaten
1 medium carrot, diced
1/2 cup peas, frozen or fresh
3 green onions, chopped
2 cloves garlic, minced
Salt and pepper to taste

Directions:

In a bowl, marinate the beef slices in 1 tablespoon of soy sauce for at least 15 minutes.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and stir-fry until browned and cooked through. Remove beef from skillet and set aside.
In the same skillet, add the eggs and scramble until fully cooked. Remove eggs and set aside with the beef.
Add the remaining tablespoon of vegetable oil to the skillet. Sauté garlic, carrots, and peas until the vegetables are tender.
Add the cooked rice, the remaining tablespoon of soy sauce, oyster sauce, and sesame oil to the skillet. Stir well to combine.
Return the beef and eggs to the skillet. Mix everything together and cook for another 2-3 minutes, ensuring everything is heated through.
Season with salt and pepper to taste.

Garnish with green onions before serving.
