Chicken Bacon Ranch Potato Bake

Ingredients

1/2 cup olive oil
1 tsp salt
1 ranch dressing mix (dry powder)
14 medium potatoes, cubed
3 chicken breast, cubed
2 1/2 cup shredded cheese
1 cup crumbled bacon
1 cup green onions, chopped
1 tsp black pepper

Steps

First preheat your oven to 500 degrees.

From there, coat a baking dish that’s there with some cooking spray

Take a large bowl and from there, combine the oil, the pepper and salt, along with the ranch dressing mix.

You will also want to add in a teaspoon of each of these and a cup of the olive oil. Put the potatoes into this when they’re ready, and then toss all of this together until the potatoes are coated in this mixture.

When it is done, take the potatoes and only the potatoes and put them in the baking dish. Leave as much of the oil that you can with this.

Roast the potatoes that are in there until they’re crispy, usually taking about an hour. Make sure to stir this every 15 or so minutes.

Take the raw chicken and then cut this into pieces that are bite-sized. Add in more oil to this, tossing this well so that everything’s fully coated on the chicken.

Then, mix the bacon, the cheese, and the onions together, making sure that it’s all perfectly combined.

Once you see the potatoes are crispy, you want to take the potatoes out of the oven, and from there lower the oven temperature all the way down to 400 degrees.

Take the potatoes and then top this with the cheese and the raw chicken together, baking this for at least another 15-20 minutes.

You should see the bacon start to get a little bit crispy and the chicken is cooked. If you don’t see it fully cooked yet, leave it in there for another couple of minutes.

Once this is finished, let it sit to cool on a wired rack for at least another 10 minutes or until it’s cool enough for you to handle all of this.

Serve this with more ranch dressing or sour cream over the top of this to give it a savory taste. Enjoy!
