Famous Vanilla Cake

INGREDIENTS

  • half cup unsalted butter softened to room temperature [ 120 g ]
  • half cup of canola oil [ 120 ml ]
  • one 1/2 cup sugar [ 300 g ]
  • 4 eggs [ room temperature preferred]
  • 1 Tablespoon vanilla extract
  • 3 cups (390 g) of all-purpose flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup buttermilk [ room temperature preferred 300 ml ]
  • 1 batch of Chocolate Frosting

INSTRUCTIONS

1. Set the oven to 350°F (177°C) and prepare two deep 8″ round cake pans** by covering the bottoms with parchment paper and gently greasing the edges. Place aside.

2. In the bowl of a stand mixer (or in a large bowl using an electric mixer) cream together the butter, canola oil, and sugar until creamy and well combined.

3. Add eggs, one at a time, beating well after each addition.

4. Stir in vanilla extract.

5. Combine salt, baking powder, and flour in a separate medium basin.

.6. Using a spatula and gently hand-mixing, alternate adding flour mixture and buttermilk to the butter mixture, starting and ending with flour mixture and mixing until just combined after each addition. While the batter should be entirely mixed and smooth, avoid overmixing.

7. Distribute the mixture evenly among the prepared cake pans, and bake for 30-35 minutes at 350°F (175°C). When A toothpick is inserted in the center of the cake should come out mainly clean and contain only a few moist crumbs when it has finished baking (no wet batter)
