OLD FASHIONED ORANGE CANDY

Ingredients

  • 250g sugar
  • 50 g of glucose syrup with honey
  • 7 drops of red coloring + 8 drops of yellow coloring
  • a teaspoon of orange flavoring
  • the juice of a strained orange
  • powdered sugar

*Preparation

Start by mixing the dyes to get orange.

On the baking sheet covered with parchment paper, place a silicone mold with small cells, and mini muffin molds.

Pour 10 cl of water, the sugar and the glucose into a saucepan and heat it over medium heat.

When boiling is reached, pass a damp brush over the side of the pan.

Immerse the thermometer in the syrup, and when it reaches 140°C, pour in the orange colouring.

Mix and continue heating to 150°C.

At this point, add the orange flavoring and the filtered juice.

Always leave on the heat and when the thermometer reaches 160°C, pour the preparation into a heat-resistant container with a spout and distribute the mixture in the moulds.

The preparation freezes very quickly, put it back on the fire several times to liquefy it.

Leave to harden and when you unmold, dip the candies in the powdered sugar.
