Creamy lemon squares

Lemon squares are classic American pastries. They are soooo delicious!!! The crumbly shortbread dough and flavorful lemon cream make them taste unforgettable… I also completely agree with the statement that lemon pastries lift your spirits

Ingredients :

  • 220g soft butter
  • 1/2 cup sugar
  • 2 cups of flour
  • pinch of salt
  • For the lemon cream:
  • 6 eggs
  • 2 cups sugar
  • zest of 3-4 lemons
  • 1/2 cup lemon juice
  • 1 cup flour

Instructions :

STEP 1/8
Cream butter and sugar until whipped.

STEP 2/8
Gradually sprinkle in sifted flour and salt. Continue to whisk on low speed
until crumbly.

STEP 3/8
Place the dough on a greased sheet of parchment or foil in a mold and flatten evenly.
Place the dough in the mold in the refrigerator to chill for 30 minutes.

STEP 4/8
Bake the cooled dough in the oven for 15-20 minutes until light brown. Remove

For the lemon cream, beat the eggs with the sugar, lemon juice and lemon zest.

Gradually add flour. Mix until a smooth, liquid consistency is reached.

Pour the lemon layer onto the cooled crust. Bake in the oven for 30-35 minutes.

Take the mold with the finished cakes out of the oven and allow to cool…. Only when completely
cool completely, take the cake out of the mold, cut into squares and sprinkle with powdered sugar
