{"id":26869,"date":"2022-10-08T21:11:31","date_gmt":"2022-10-08T21:11:31","guid":{"rendered":"https:\/\/mrhealthyalternative.com\/?p=26869"},"modified":"2022-10-08T21:11:31","modified_gmt":"2022-10-08T21:11:31","slug":"tomato-soup-and-grilled-cheese","status":"publish","type":"post","link":"https:\/\/mrhealthyalternative.com\/?p=26869","title":{"rendered":"TOMATO SOUP AND GRILLED CHEESE"},"content":{"rendered":"<div class=\"63d509947b33dea96ed9a09b2482b63d\" data-index=\"1\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<div data-type=\"_mgwidget\" data-widget-id=\"1554417\">\r\n<\/div>\r\n<script>(function(w,q){w[q]=w[q]||[];w[q].push([\"_mgc.load\"])})(window,\"_mgq\");\r\n<\/script>\r\n\n<\/div>\n<p>Grilled cheese and tomato soup is one of the most delicious and easy-to-make food combos out there.<\/p>\n<p><strong>RECIPE &#8212;&#8212; TOMATO SOUP <\/strong><\/p>\n<ul>\n<li>\u25aa2 28oz cans whole peeled tomato<\/li>\n<li>\u25aa1 medium red onion, chopped<\/li>\n<li>\u25aa30-40g or 8 cloves sliced garlic<\/li>\n<li>\u25aa50-60g or 4Tbsp (a very long squeeze) olive oil<\/li>\n<li>\u25aa15g or 2 1\/2tsp salt<\/li>\n<li>\u25aa15g or 3 2\/3tsp sugar<\/li>\n<li>\u25aa750g\/mL or 3c chicken stock (+ additional 75g or so to thin soup if needed)<\/li>\n<li>\u25aa40g or 3Tbsp tomato paste<\/li>\n<li>\u25aa1 chipotle chili in adobo (optional)<\/li>\n<li>\u25aaGrated parm<\/li>\n<li>\u25aaChives, minced<\/li>\n<li>\u25aaAdditional olive oil (for garnish)<\/li>\n<li>\u25aaPepper<\/li>\n<\/ul>\n<p><strong>Preheat oven to 450F\/232C<\/strong><\/p>\n<p>Add canned tomatoes, onion, garlic, olive oil, salt, sugar, chicken stock, tomato paste, and chili in adobo to large baking dish or dutch oven. Stir ingredients to combine and roast in the oven for 1 hour, stirring halfway through.<\/p>\n<p>After 60-75 minutes of roasting, remove from the oven, carefully ladle half of the \u201csoup\u201d into a blender, and blend on high until smooth (obviously this stuff will be hot so use caution) .<\/p>\n<p>Transfer to a fine mesh strainer over a sauce pot and force soup through to create a silky texture.<\/p>\n<p>Repeat with the second half of the unblended soup. If needed, add additional chicken stock to thin to desired consistency.<\/p>\n<p>Season to taste with salt.<\/p>\n<p>Hold soup over low heat to keep warm while you make the grilled cheese sandos.<\/p>\n<p>Garnish with chives, olive oil, parm, and black pepper.<\/p>\n<p><strong>GRILLED CHEESE <\/strong><\/p>\n<ol>\n<li>\u25aa125g or 1 stick butter<\/li>\n<li>\u25aa75g or 1\/4c + 1 heaping Tbsp mayo<\/li>\n<li>\u25aa15g or 1Tbsp dijon<\/li>\n<li>\u25aaBasic hearty white bread (recipe here: BLT video: @ocBM)<\/li>\n<li>\u25aaCheeses: american, gruyere, provolone<\/li>\n<\/ol>\n<p>Add butter, mayo, and dijon to food processor.<\/p>\n<p>Process until smooth. Set aside. Preheat nonstick pan over medium low heat.<\/p>\n<p>Liberally spread butter\/mayo\/mustard mixture over one side of two slices of bread.<\/p>\n<p>Flip to non buttered side and layer down cheeses &#8211; slice american, slices gruyere, slice provolone, and another slice of american.<\/p>\n<p>Place in skillet,pressing down with spatula for about 30 seconds.<\/p>\n<p>Cook for additional 90 seconds or until side one reaches desired amount of brown.<\/p>\n<p>Flip to the second side and toast for an additional two minutes or until side two is golden brown and cheeses are melty.<\/p>\n\n<div style=\"font-size: 0px; height: 0px; line-height: 0px; margin: 0; padding: 0; clear: both;\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Grilled cheese and tomato soup is one of the most delicious and easy-to-make food combos out there.
