{"id":26706,"date":"2022-09-21T21:08:43","date_gmt":"2022-09-21T21:08:43","guid":{"rendered":"https:\/\/mrhealthyalternative.com\/?p=26706"},"modified":"2022-09-21T21:09:35","modified_gmt":"2022-09-21T21:09:35","slug":"christmas-cranberry-cake","status":"publish","type":"post","link":"https:\/\/mrhealthyalternative.com\/?p=26706","title":{"rendered":"Christmas Cranberry Cake"},"content":{"rendered":"<div class=\"63d509947b33dea96ed9a09b2482b63d\" data-index=\"1\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<div data-type=\"_mgwidget\" data-widget-id=\"1554417\">\r\n<\/div>\r\n<script>(function(w,q){w[q]=w[q]||[];w[q].push([\"_mgc.load\"])})(window,\"_mgq\");\r\n<\/script>\r\n\n<\/div>\n<div>\n<p>Christmas Cranberry Cake<\/p>\n<p><strong>INGREDIENTS<\/strong>:<\/p>\n<\/div>\n<div>\n<ul>\n<li>\u00a0 3 eggs<\/li>\n<li>\u00a0 2 cups sugar<\/li>\n<li>\u00a0 3\/4 cup unsalted butter slightly softened and cut into chunks<\/li>\n<li>\u00a0 1 1\/2 tsp vanilla<\/li>\n<li>\u00a0 1 tsp salt<\/li>\n<li>\u00a0 2 tbsp whole milk<\/li>\n<li>\u00a0 2 cups flour plus more to toss the cranberries to cover them completely.<\/li>\n<li>\u00a0 2 1\/2 cups cranberries 12 ounce bag<\/li>\n<\/ul>\n<\/div>\n<div>\n<h4>Frosting<\/h4>\n<\/div>\n<div>\n<ul>\n<li>\u00a0 1 stick butter (1\/2 cup), softened<\/li>\n<li>\u00a0 8 oz cream cheese , softened softened<\/li>\n<li>\u00a0 3 cups powdered sugar add more until the desired consistency enough to spread on top of the cake, sifted<\/li>\n<li>\u00a0 1 tsp vanilla extract<\/li>\n<\/ul>\n<\/div>\n<div>\n<h4>Garnish<\/h4>\n<\/div>\n<div>\n<ul>\n<li>\u00a0 dried cranberries handfull<\/li>\n<li>\u00a0 1\/2 cup white chocolate chips<\/li>\n<\/ul>\n<\/div>\n<div>\n<h2>DIRECTIONS:<\/h2>\n<\/div>\n<div>\n<p>1. Preheat oven to 350\u00b0F. Grease a 9-inch springform pan. In a small bowl, toss cranberries with a handful flour to cover them completely.<\/p>\n<p>2. In a large bowl, beat eggs and sugar for 5-7 minutes, until eggs have increased in volume and stream into ribbons when you lift the beaters.<\/p>\n<p>3. Add butter and vanilla and beat until incorporated, about 2 minutes. Beat in milk and salt. Stir in flour, then fold in cranberries. Scrape batter into prepared pan.<\/p>\n<p>4. Bake for an hour, or until a tester comes out clean (but there might be cranberry juices on it). Cool on a wire rack. Run a knife around the cake and then unmold.<\/p>\n<p>5. Beat the cream cheese and butter with an electric mixer until soft. Mix in the powdered sugar about 1 cup at a time, alternating with the cream until the desired sweetness and consistency is reached. mix in vanilla extract.<\/p>\n<p>6. Spread on top of the cake.Refrigerate the cake until the frosting is set. When ready to serve, melt white chocolate chips in a bowl as directed on package. Sprinkle the top with dried cranberries and drizzle white chocolate on top.<\/p>\n<p>7.
