{"id":26321,"date":"2022-08-16T21:49:53","date_gmt":"2022-08-16T21:49:53","guid":{"rendered":"https:\/\/mrhealthyalternative.com\/?p=26321"},"modified":"2022-08-16T21:49:53","modified_gmt":"2022-08-16T21:49:53","slug":"mexican-stuffed-zucchini","status":"publish","type":"post","link":"https:\/\/mrhealthyalternative.com\/?p=26321","title":{"rendered":"Mexican Stuffed Zucchini"},"content":{"rendered":"<div class=\"63d509947b33dea96ed9a09b2482b63d\" data-index=\"1\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<div data-type=\"_mgwidget\" data-widget-id=\"1554417\">\r\n<\/div>\r\n<script>(function(w,q){w[q]=w[q]||[];w[q].push([\"_mgc.load\"])})(window,\"_mgq\");\r\n<\/script>\r\n\n<\/div>\n<p class=\"summary\">Zucchini stuffed with a Mexican style filling with seasoned beef, tomatoes, beans and corn, all covered in melted cheese!<\/p>\n<h2>Ingredients<\/h2>\n<ul class=\"ingredients\">\n<li>4 medium zucchini<\/li>\n<li>1\/2 pound ground beef<\/li>\n<li>1\/2 cup onion, diced<\/li>\n<li>1 tablespoon\u00a0taco seasoning\u00a0(or 1\/2 package)<\/li>\n<li>1\/4 cup water<\/li>\n<li>1 cup diced tomatoes (or salsa)<\/li>\n<li>1\/2 cup black beans, rinsed and drained<\/li>\n<li>1\/2 cup corn<\/li>\n<li>1 cup cheese (cheddar and\/or monterey jack), shredded<\/li>\n<li>2 tablespoons cilantro, chopped<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<p>Cut the zucchini in half lengthwise, and hollow it out (using a spoon or melon baller) until the zucchini is about \u00bc inch thick, reserving and chopping the zucchini from the inside.<\/p>\n<p>Cook the beef and onion in a large skill until the beef is cooked through, before draining off any excess grease.<\/p>\n<p>Add the zucchini and cook until tender, about 5 minutes.<\/p>\n<p>Add the taco seasoning and water and cook, mixing, until the seasoning is mixed in evenly and the liquid has cooked off, about 5 minutes.<\/p>\n<p>Add the tomatoes, beans, and corn and cook for a minute before mixing in the cilantro and turning off the heat.<\/p>\n<p>Place the beef mixture into the hollowed out zucchini halves and place them on a baking sheet.<\/p>\n<p>Sprinkle on the cheese and bacon in a preheated 350F\/180C oven until the zucchini is tender, about 30-40 minutes.<\/p>\n<div class=\"notes\"><span class=\"note\"><b>Option<\/b>: Make this meatless by replacing the beef with an extra 1\/2 cup of each: onion, tomatoes, black beans, and corn!<\/span><\/div>\n\n<div style=\"font-size: 0px; height: 0px; line-height: 0px; margin: 0; padding: 0; clear: both;\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Zucchini stuffed with a Mexican style filling with seasoned beef, tomatoes, beans and corn, all covered in melted cheese!
