Enjoy!<\/p>\n<p><em><strong>Ingredients:<\/strong><\/em><\/p>\n<p><strong>For the Cream Cheese Crust:<\/strong><\/p>\n<p>1 c +2 tbsp all-purpose flour<\/p>\n<p>\u00bc tsp salt<\/p>\n<p>4 ounces cream cheese<\/p>\n<p>1\/2 c unsalted butter, softened<\/p>\n<p>ice water as needed<\/p>\n<p><strong>For the Sweet Potato Filling:<\/strong><\/p>\n<p>\u00bc c butter, unsalted, softened<\/p>\n<p>1 c sugar<\/p>\n<p>2 c cooked, mashed sweet potatoes<\/p>\n<p>3 Eggs, room temperature<\/p>\n<p>\u00bc c brandy [I use E&amp;J XO Extra Smooth Brandy]<\/p>\n<p>2 tsp grated lemon zest (be careful not to get the bitter, white pith!)<\/p>\n<p>2 tbsp lemon juice<\/p>\n<p>1 tsp vanilla extract<\/p>\n<p>1\/8 tsp freshly ground nutmeg<\/p>\n<p>1 unbaked (9-inch) pastry shell<\/p>\n<p><em><strong>Directions:<\/strong><\/em><\/p>\n<p><strong>For the Cream Cheese Pastry:<\/strong><\/p>\n<p>In a medium mixing bowl, add flour and salt. Whisk until well combined.<\/p>\n<p>In the bowl of a stand mixer, add butter and cream cheese. Beat until well combined.<\/p>\n<p>Transfer the flour mixture and beat until well mixed.<\/p>\n<p>Add cold water gradually and mix until the dough forms into a ball.<\/p>\n<p>Gently pat the dough to shape it into a circle.<\/p>\n<p>Cover the dough with plastic wrap, then place it inside the fridge to chill for about 4 hours to overnight.<\/p>\n<p>Unroll the pastry to about 1\/8-inch thick, then place it into a pie dish.<\/p>\n<p>Trim and roll the sides below.<\/p>\n<p>Cover it and place it inside the fridge.<\/p>\n<p><strong>For the Filling:<\/strong><\/p>\n<p>Prepare the oven and preheat to 200 degrees C or 400 degrees F.<\/p>\n<p>In a small pan, add the brandy. Place it on the stove and allow it to become hot. Remove from the heat.<\/p>\n<p>In a mixing bowl, add butter and beat until creamy.<\/p>\n<p>Add sugar and beat until well mixed.<\/p>\n<p>Add the potatoes and beat until just combined.<\/p>\n<p>Add eggs gradually and beat every addition.<\/p>\n<p>Pour in the brandy together with lemon juice, lemon zest, nutmeg, and vanilla. Beat until well combined.<\/p>\n<p>Spread the icing over the pastry shell.<\/p>\n<p>Place it inside the preheated oven and bake for about 15 minutes or until a toothpick comes out clean after inserting it in the middle.<\/p>\n<p>Remove from the oven and allow it to cool at room temperature.<\/p>\n<p>Serve and enjoy!<\/p>\n\n<div style=\"font-size: 0px; height: 0px; line-height: 0px; margin: 0; padding: 0; clear: both;\"><\/div>","protected":false},"excerpt":{"rendered":"<p>This recipe is the definition of perfection!
