{"id":25963,"date":"2022-07-17T11:40:00","date_gmt":"2022-07-17T11:40:00","guid":{"rendered":"https:\/\/mrhealthyalternative.com\/?p=25963"},"modified":"2022-07-17T11:40:00","modified_gmt":"2022-07-17T11:40:00","slug":"cajun-shrimp-loaded-baked-potato","status":"publish","type":"post","link":"https:\/\/mrhealthyalternative.com\/?p=25963","title":{"rendered":"Cajun Shrimp Loaded Baked Potato"},"content":{"rendered":"<div class=\"63d509947b33dea96ed9a09b2482b63d\" data-index=\"1\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<div data-type=\"_mgwidget\" data-widget-id=\"1554417\">\r\n<\/div>\r\n<script>(function(w,q){w[q]=w[q]||[];w[q].push([\"_mgc.load\"])})(window,\"_mgq\");\r\n<\/script>\r\n\n<\/div>\n<p>Cajun Shrimp Loaded Baked Potato<\/p>\n<p><strong>Ingredients:<br \/>\n<\/strong><\/p>\n<p><strong>Potato &amp; Stuffing:<\/strong><\/p>\n<p>4 large potatoes<\/p>\n<p>\u00bd lb. medium shrimp, peeled &amp; deveined, leaving tail on (save shells for stock)<\/p>\n<p>\u00bd cup crawfish tail meat<\/p>\n<p>8 oz Italian 6 cheese blend, shredded<\/p>\n<p>2 tbsp. cooking oil<\/p>\n<p>olive oil<\/p>\n<p>Slap Ya Mama Original Blend Cajun Seasoning, to taste<\/p>\n<p>Sherry Cream Sauce2 tbsp. unsalted butter<\/p>\n<p>2 large garlic cloves, minced<\/p>\n<p>2 medium shallots, diced<\/p>\n<p>\u00bc cup brandy, flamb\u00e9ed (ignite) is optional<\/p>\n<p>2 cups sherry wine<\/p>\n<p>1 cup shrimp stock<\/p>\n<p>\u00bc cup crawfish juice, drained from crawfish packaging<\/p>\n<p>1 cup heavy whipping cream<\/p>\n<p>\u00bd cup crawfish tail meat<\/p>\n<p>\u00bd cup green onions, sliced for garnish<\/p>\n<p><strong>Directions:<br \/>\n<\/strong>Preheat oven to 400 degrees F.<br \/>\nIn a saucepan over medium-high heat, add 1 tablespoon of butter, garlic and shallots. Sautee lightly for about 2 minutes; add brandy and flamb\u00e9 (ignite), stirring constantly.<br \/>\nAdd the wine, shrimp stock and crawfish juice and reduce by half.<br \/>\nAdd heavy whipping cream and continue cooking.<br \/>\nWhen the sauce is at a smooth consistency, stir in remaining butter and mix well.<br \/>\nAdd remaining Crawfish tail meat and cook for another 2 minutes. (The sauce should have the consistency of Alfredo Sauce.)<\/p>\n<p><strong>Hint:<\/strong>\u00a0If sauce is too thick, thin it out with a little chicken broth.
