{"id":25910,"date":"2022-07-15T14:26:32","date_gmt":"2022-07-15T14:26:32","guid":{"rendered":"https:\/\/mrhealthyalternative.com\/?p=25910"},"modified":"2022-07-15T14:26:42","modified_gmt":"2022-07-15T14:26:42","slug":"cream-cheese-chicken-enchiladas","status":"publish","type":"post","link":"https:\/\/mrhealthyalternative.com\/?p=25910","title":{"rendered":"Cream Cheese Chicken Enchiladas"},"content":{"rendered":"<div class=\"63d509947b33dea96ed9a09b2482b63d\" data-index=\"1\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<div data-type=\"_mgwidget\" data-widget-id=\"1554417\">\r\n<\/div>\r\n<script>(function(w,q){w[q]=w[q]||[];w[q].push([\"_mgc.load\"])})(window,\"_mgq\");\r\n<\/script>\r\n\n<\/div>\n<p>Cream Cheese Chicken Enchiladas<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<div class=\"separator\">\u00b08-10 flour tortillas<\/div>\n<div class=\"separator\">\u00b01 pack (8 oz ) cheese<\/div>\n<div class=\"separator\">\u00b01-2 cans (4 oz ) green peppers<\/div>\n<div class=\"separator\">\u00b03 c cook chicken<\/div>\n<div class=\"separator\">\u00b02\u00a0 \u00a0C Mexican cheese, divided [1 cup; 1 cup)<\/div>\n<div class=\"separator\">\u00b02 c low sodium chicken broth<\/div>\n<div class=\"separator\">\u00b03 tsp unsalted butter<\/div>\n<div class=\"separator\">\u00b03 tsp all-purpose flour<\/div>\n<div class=\"separator\">\u00b01 t lemon juice<\/div>\n<div class=\"separator\">\u00b01 t of cumin<\/div>\n<div class=\"separator\">\u00b01\/2 t chilli powder<\/div>\n<div class=\"separator\">\u00b0salt ground pepper to taste<\/div>\n<div class=\"separator\">\u00b0Fresh cilantro, garnish, optional<\/div>\n<div class=\"separator\"><\/div>\n<div class=\"separator\">*Directions<\/div>\n<p>Preheat\u00a0 oven to 350 degrees F and grease a 9 x 13 inch baking dish with a little nonstick spray.<\/p>\n<p>In a mixing bowl, combine half the cream cheese, chicken, one cup of cheese, lemon juice, cumin and chili powder, and season with salt and pepper if desired.<\/p>\n<p>Take 1 tortilla and fill it with 2-3 tablespoons of the chicken mixture, then place seam side down on the baking dish. Repeat with rest tortilla &amp; filling.<\/p>\n<p>In a saucepan over medium heat, dissolve the butter. Stir in the flour and cook for 2-3 minutes, or until golden.<\/p>\n<p>Season with salt and pepper, then gradually stir in the chicken and green pepper broth.
