{"id":24799,"date":"2022-03-25T21:50:21","date_gmt":"2022-03-25T21:50:21","guid":{"rendered":"https:\/\/mrhealthyalternative.com\/?p=24799"},"modified":"2022-03-25T21:50:21","modified_gmt":"2022-03-25T21:50:21","slug":"twice-baked-potatoes-with-maine-lobster-recipe","status":"publish","type":"post","link":"https:\/\/mrhealthyalternative.com\/?p=24799","title":{"rendered":"TWICE BAKED POTATOES WITH MAINE LOBSTER RECIPE"},"content":{"rendered":"<div class=\"63d509947b33dea96ed9a09b2482b63d\" data-index=\"1\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<div data-type=\"_mgwidget\" data-widget-id=\"1554417\">\r\n<\/div>\r\n<script>(function(w,q){w[q]=w[q]||[];w[q].push([\"_mgc.load\"])})(window,\"_mgq\");\r\n<\/script>\r\n\n<\/div>\n<p>TWICE BAKED POTATOES WITH MAINE LOBSTER RECIPE<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2ct 1 1\/2 Maine lobsters<\/li>\n<li>4 large baking potatoes<\/li>\n<li>4 tablespoons butter<\/li>\n<li>1\/3 cup onions, finely chopped<\/li>\n<li>1\/2 cup mushrooms, finely chopped<\/li>\n<li>1 cup dry white vermouth<\/li>\n<li>1\/2 cup cr\u00e8me fraiche (see recipe below)<\/li>\n<li>1\/2 cup Jarlsburg cheese, grated, plus a little extra 1 to 2 tablespoons heavy cream<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<div class=\"post-body my-3\">\n<p><strong>Cr\u00e8me Fraiche:<\/strong><\/p>\n<ul>\n<li>1 cup heavy cream<\/li>\n<li>1 cup sour cream<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p><strong>Step 1.<\/strong><\/p>\n<p>Cook and pick your Maine lobsters. Scrub and dry your potatoes and cut a deep slit in the top of each one. Set the potatoes on the middle rack of the oven and bake for 1 hour. Let them cool slightly, cut off and discard the tops and scrape the potato pulp into a bowl, being careful not to scrape through the skin. Salt and pepper the potato skins. Mash the potato pulp and set aside.<\/p>\n<p><strong>Step 2.<\/strong><\/p>\n<p>Melt butter in a small skillet and saut\u00e9 the chopped onion until translucent. Add mushrooms and saut\u00e9 for another 5 minutes. Stir in the Maine lobster and season with salt and pepper. Add vermouth, and then raise the heat to a boil. Stir frequently until all the liquid has boiled away. Stir in cr\u00e8me fraiche and remove from heat.<\/p>\n<p><strong>Step 3.\u00a0<\/strong><\/p>\n<p>Combine the Maine lobster mixture with the reserved mashed potatoes and 1\/2 jarlsburg cheese. Add heavy cream. Stuff the mixture into the potato skin shell, mounding the mixture slightly.<\/p>\n<p><strong>Step 4.<\/strong><\/p>\n<p>Sprinkle remaining cheese on top and bake at 400 degrees for 15 minutes or until mixture is hot and bubbly. Step 5 Cr\u00e8me Fraiche: Whisk heavy cream and sour cream together. Let stand in a reasonably warm spot until thickened.
