Pour the mixture into a flat pan large enough to accommodate the fillets. Lay the fish out in a single layer over the bottom of the pan, turning each side to coat and set aside to marinate.<\/p>\n<p><strong>Step 2<\/strong><\/p>\n<p>In a 2-gallon resealable plastic bag, combine cornmeal, flour, and seafood seasoning. Add the fish to the mixture, a few fillets at a time, and mix gently until evenly coated.<\/p>\n<p><strong>Step 3<\/strong><\/p>\n<p>Heat oil in deep fryer to 365\u00b0F (185\u00b0C).<\/p>\n<p><strong>Step 4<\/strong><\/p>\n<p>Fry the fillets until golden brown, about 3 minutes. Avoid crowding so the fillets have room to brown properly. The fish should be slightly crunchy on the outside and moist on the inside.
