{"id":23802,"date":"2022-01-07T21:27:17","date_gmt":"2022-01-07T21:27:17","guid":{"rendered":"http:\/\/mrhealthyalternative.com\/?p=23802"},"modified":"2022-08-17T20:21:17","modified_gmt":"2022-08-17T20:21:17","slug":"the-best-mashed-potatoes","status":"publish","type":"post","link":"https:\/\/mrhealthyalternative.com\/?p=23802","title":{"rendered":"The BEST Mashed Potatoes!"},"content":{"rendered":"<div class=\"63d509947b33dea96ed9a09b2482b63d\" data-index=\"1\" style=\"float: none; margin:10px 0 10px 0; text-align:center;\">\n<div data-type=\"_mgwidget\" data-widget-id=\"1554417\">\r\n<\/div>\r\n<script>(function(w,q){w[q]=w[q]||[];w[q].push([\"_mgc.load\"])})(window,\"_mgq\");\r\n<\/script>\r\n\n<\/div>\n<p><strong>The BEST Mashed Potatoes!<\/strong><\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>5 pounds potatoes\u00a0<em>(I use half Yukon Gold, half Russet potatoes)<\/em><\/li>\n<li>2 large cloves garlic, minced<\/li>\n<li>fine sea salt<\/li>\n<li>6 tablespoons butter<\/li>\n<li>1 cup whole milk<\/li>\n<li>4\u00a0ounces cream cheese, room temperature<\/li>\n<li>toppings: chopped fresh chives or green onions, freshly-cracked black pepper<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<p><strong>Cut the potatoes.\u00a0\u00a0<\/strong><\/p>\n<p>Feel free to peel your potatoes or leave the skins on.\u00a0 Then cut them\u00a0into evenly-sized chunks, about an inch or so thick, and transfer them to a large stockpot full of cold water.<\/p>\n<p><strong>Boil the potatoes.\u00a0\u00a0<\/strong><\/p>\n<p>Once all of your potatoes are cut, be sure that there is enough cold water in the pan so that the water line sits about 1 inch above the potatoes.\u00a0 Stir\u00a0the garlic and 1 tablespoon sea salt into\u00a0the water.\u00a0 Then turn the heat to high and cook until the water comes to a boil.\u00a0 Reduce heat to medium-high (or whatever temperature is needed to maintain the boil) and continue cooking for about 10-12 minutes, or until a knife inserted in the middle of a potato goes in easily with almost no resistance.\u00a0 Carefully drain out all of the water.<\/p>\n<p><strong>Prepare your melted butter mixture.\u00a0<\/strong><\/p>\n<p><strong>\u00a0<\/strong>Meanwhile, as the potatoes are boiling, heat\u00a0the butter, milk and an additional 2 teaspoons of sea salt together either in a small saucepan or in the microwave until the butter is\u00a0<em>just<\/em>\u00a0melted.\u00a0 (You want to avoid boiling the milk.)\u00a0 Set aside until ready to use.<\/p>\n<p><strong>Pan-dry the potatoes.\u00a0<\/strong><\/p>\n<p><strong>\u00a0<\/strong>After draining the water, immediately return the potatoes to the hot stockpot, place it back on the hot burner,\u00a0and turn the heat down to low.\u00a0 Using two oven mitts, carefully hold the handles on the stockpot and shake it gently on the burner for about 1 minute to help cook off some of the remaining steam within the potatoes.\u00a0 Remove the stockpot entirely from the heat and set it on a flat, heatproof surface.<\/p>\n<p><strong>Mash the potatoes.<\/strong><\/p>\n<p>Using your preferred kind of potato masher \\, mash the potatoes to your desired consistency.<\/p>\n<p><strong>Stir everything together.\u00a0<\/strong><\/p>\n<p><strong>\u00a0<\/strong>Then\u00a0pour half of the\u00a0melted butter mixture over the potatoes, and fold it in with a wooden spoon or spatula until potatoes have soaked up the liquid.\u00a0 Repeat with the remaining butter, and then again with the cream cheese, folding in each addition in until\u00a0<em>just\u00a0<\/em>combined to avoid over-mixing.\u00a0 (Feel free to add in more warm milk to reach your desired consistency, if needed.)<\/p>\n<p><strong>Taste and season.\u00a0<\/strong><\/p>\n<p><strong>\u00a0<\/strong>One final time, taste the potatoes and season with extra salt if needed.<\/p>\n<p><strong>Serve warm.\u00a0<\/strong><\/p>\n<p><strong>\u00a0<\/strong>Then serve warm, garnished with any extra toppings that you might like, and enjoy!<\/p>\n\n<div style=\"font-size: 0px; height: 0px; line-height: 0px; margin: 0; padding: 0; clear: both;\"><\/div>","protected":false},"excerpt":{"rendered":"<p>The BEST Mashed Potatoes!
